As I'm spending the next year or so saving up for the last of my downpayment for a house. I will be spending a lot of time working and spending as little money on food as I can.

Anyways. I was thinking of making some rouxs that I could freeze and later just mix with rice for a quick tasty meal. Anyone got any suggestions?

Japanese style does. And it is nasty.

It doesn't /necessarily/ have to be made with a roux and even the ones that are made with one (which is the majority of Japanese curries) aren't /necessarily/ bad.
Homemade Japanese curry made from roux is pretty good, actually, and barely takes any more time than using boxed curry roux and only marginally more effort.
That said, of all curries that are made from powders, Jamaican is best, anyway and that one isn't made from roux.
