There was a little food cart in Flagstaff Arizona that hung out close to campus and served dirt cheap mexican food. A few bucks would get you an EPIC burrito filled with a little meat, lotsa beans and rice, nacho cheese sauce, shredded iceberg lettuce, jarred sliced jalapenos etc.

Dude was open till 4 in the morning, and he called his place Munchies. Parked it in the lot outside a popular bar as I recall.

In the late 90's I knew 7 people that started a business of pressure washer sales, 3 of them sold off their current business (hobby store, teriyaki, hotdog cart).
In the last 5 years or so, 4 of them moved into the food truck business. All 7 of them are in the financial shithole, one can't run a legitimate business due to massive debt and a tax evasion charge.
Since the late 90's I've been making furniture and custom cabinets in my garage, never got into the business of fad businesses, and am financially safe with almost $100K in my retirement fund.

Id consider adopting various south american cuisines and presenting them in a new hybrid variety.

Chicken, steak and carnitas tacos and breakfast tacos (bacon and egg, chorizo and egg, etc.). I can buy the cheapest possible meats and veggies, but I'll make my own tortillas (won't taste any better than store bought, but they'll be a different shape, people love that) and people won't notice or care because taco trucks are hip and trendy. They'll talk about how great it is compared to Chipotle and I'll laugh to myself knowing how much profit I make selling meat that I bought on sale because it was close to the best by date. What do I make? Breakfast burritos motherfucker... Saw a business that only ran for 2 hours a day on North Fort Lewis start up from a table, cash box and hot plate outright buy a deluxe (as in super nice) food truck within a year, paid in cash. We head over to purveyors every opportunity we get and get kosher or halal meat, weekly buy produce from whatever local farmers are around and then we make semi gourmet food.

Likely just BBQ, Fried chicken, naturally we gotta put some burritos and falafel in there.

Aside from that, we also sell ultra cheap food.

Nutella and (reeses) peanut butter sandwiches.
We'd sell soup for pretty cheap so that way we don't waste any veggies or meat, everything gets used. and we'd have lunch hour specials: buy two full meals get one free, bring in a new customer get half off your meal, stuff like that.

Should be pretty good, I'd expect some nice returns if we run 16 hour days.

7AM-2:30AM, that way we can catch bar crowds on weekends.
