Gonna cook oatmeal with some spinach and carrots in it, and eat it with some salmon

You can mix it, but if you want it to be more photo-friendly, you could make thin oat pancakes, wilt the spinach, grill the carrots, and make some sort of sandwich with it.

Cut it in half diagonally, put one piece on top and offset from the other on a plate, sprinkle some greens around it, and have yourself a delicious lunch!

Or you can just mix it all together in a bowl to see if the flavors and textures are OK together.

Not OP but is there any way to make my oats less bland? I add peanut butter, nuts, honey and even some sugar and it still tastes like eating cardboard with a better texture.

I'd put some fruits but I don't have any at the moment.

I have tried to make different stuff with oatmeal and it always just ends up tasting like I threw shit in with my breakfast oatmeal. It's going to taste like oatmeal and there is no avoiding it, but if you like that it will work OP.

Two things matter if you want taste from oats. One is the quality of oats that you buy. /ck/ recommends steel cut oats constantly because they're the least fucked-with when processed for groceries.

Another thing that might help is lightly toasting them in the oven before using them. Maillard's reaction will make your oats taste yummy.
