Can we have a tea thread?

How long do you let your tea steep?

I'm fairily new to tea, but when I make a cup, I let it steep infintely long and get it to the point that it is really really bitter, I like it that way kind of. It gets more of the flavor into it, and I feel like I have wasted the tea if I don't let it steep until all of the flavor is out of the leaves completely.

I don't think I've ever had tea steep for a short period of time.

I follow these almost by the book, except for a very few slight derivations which I find tolerable.

Remember that different blends and varieties of Black Tea also require different steeping times. For instance if you steep 1 and 1/2 teaspoon of Earl Grey for a single cup for more than 3 and a half minutes you're likely to get an overly bitter tea because the acidic tannins of the bergamot flavoring.

Opposed to that, I steep always let my Azores Pekoe steep for about 5 minutes, sometimes even adding an extra 1/2 teaspoon just for that extra flavor, because it's a type of Black Tea with a relatively smooth, earthen taste that rarely gets bitter.

Broken/whole leaf also affects steeping time, since broken lead usually steeps faster, as it releases the tea flavor easily.

And I also take it that you're not a sugar lover. That's good. Sugar ruins tea. If you happen to like sugar, eat a biscuit or a slice of cake while enjoying your daily brown cup of joy. You'll find out the sweet taste of the biscuit will clear your tongue from overly strong tea tannins, allowing you to enjoy the full flavor of your tea right on the next sip.

And for god's sake, don't get one of those faggy glass teapots just because they're in. Fine china or earthenware if what you should really look for in a teapot. And believe me when I say it DOES make a difference.

Usually drinking tea also involves the ritual of making tea, and traditionally, that implies boiling the water on the stove/flame. I don't have a kettle myself so I just use one of these, which actually allows me to heat the teapot more effectively by using the water's own steam when placing the teapot on top of it.

Otherwise just buy a bloody kettle. They're cheap.

Remember that certain rules are merely a product of their time and can be adapted.

Rule nº1 is a good example, for instance. There are plenty of newer Tea varieties, both chinese and non-indian, in general, that can be as good, if not better, according to the taste. Personally I love Azores tea, as I mentioned. The third rule is another good example of a clearly outdated rule.

Personally the one that surprised me the most was the fourth. Splitting and converting the exact quantities mentioned to centiliters, allowed me to achieve the perfect Earl Grey brew, of which I became very proud of, since Earl Grey can become overly bitter very easily, and thus is not an easy tea to get started with.
