Salt isn't really a condiment at all imo (should be added during cooking process) but you can't avoid salt. Sodium is required for survival. Most of the salt in the average person's diet comes from processed foods- thus cooking at home, and controlling the amount of salt you use, is pretty much fine. Moreover, you need salt to properly balance and enhance the flavors of the things you cook, you can't just leave it out. Shit'd be bland, yo.
