Can we have a thread about sauces ? Especially Asian sauces and recipes. I'll start with something obvious: Plum Sauce. Mild, fruity / gingery taste, an important ingredient in stir-fries and wok-based foods. This is the ancestor of Duck Sauce, which is a thinner version used for dipping.

Shacha Sauce, or simply Chinese Barbecue sauce. Made from ground fried fish and shrimp with chili. Can be used like pesto, especially nice on cold noodles.

XO sauce - dried cuttlefish and shrimp in chili oil. A pretty recent thing, this is from the 80s. Expensive versions contain hundred year eggs.

Black bean sauce. Fermented black beans, usually in chili oil with garlic. Unique flavour. This is the ancestor of the Soysauce, which started as a by-product of this fermentation.

Soba Tsuyu. Basically a mix of Soysauce, Sugar, Mirin, Kelp- and Bonito-extract. For cold Soba noodles. Also as a Soysauce replacement, it's simply better than Soysauce.

Some fine sauces, OP.

Picrelated is one of my favourites, though not Asian. Perfect demi glace for duck breast or steak or pig's trotter or whatever you'd like. You can have it straight up, throw some dried fruit and shallots in with it, flavor a soup with it, etc. Fantastic.
