Quarter it.
Remove the tough, fibrous part from each quarter.
Cut the quarters into cubes; set aside.
Dissolve some tamarind paste in hot shrimp broth (ask for recipe if you don't know how to make it); set aside.
Stir fry some coconut cream and fiery curry paste (ask for recipe or use Lobo brand) together until the cream reduces considerably and it "breaks," oil separating out from the rest.
Stir fry some deboned thighs of chicken or some pork cubes until coloured, but not cooked through.
Add pineapple cubes and stir-fry a minute.
Add lime leaves and top with tamarind-spiked shrimp broth.
Simmer until reduced in volume by half.
Adjust salt with fish sauce and sweetness with palm sugar.
Eat with sticky rice.
Enjoy kaeng som kat'i, coconut sour curry (sour curry is usually not made with coconut).
