Hey /ck/. I have a huge family gathering/picnic thing coming up next week-end and I have -no- idea what to bring as far as foods go... I brought pulled pork last year, that was a success but it's a pain in the a** to prepare in my timeframe.

So, I am looking for ideas. The criterias I have to fill are :
>Must be able to travel well for 2-3 hours to the cabin where the gathering is taking place
> Must be able to scale to have at least 40-50 portions (I can multiply recipes, no worries)
> Must not require anything fancier then a few minutes in the micro-wave to reheat (because the kitchen facilities are limited)
> No food allergies/avoidances/pickyness issues

My only idea so far is gingerbread cookies, but they are more a fall type food?

Beans are cheap as shit and you can buy in bulk. Soak 'em, simmer 'em, then drain. Make a bbq sauce out of some ketchup, mustard, honey, smoked paprika, re-add the beans, toss a hamhock or smoked turkey neck in there, and let everything simmer till soft. To go with it, bake a huge aluminum pan of cornbread.

If you're set on meat, pick up some brats, braise them in beer, caramelize some onions. Serve on hoagie rolls and call it a day. Let's be realistic, you're feeding your family, not fancy people.

Not really set on meat. I am not doing the pulled pork because the only time I have to cook is friday night and the meeting is Saturday lunch-ish... last time I ended up cooking the meat overnight, getting out of bed at 6h am to take it out of the oven, shred and mix with the bbq sace, cool everything down enough to put in ziplock containers, etc.

It was a pain so I'm trying to find ideas that I can make the day before so I don't have to wake up at an ungodly hour in the morning to finish making it.

Waldorf salad, OP? Green apples, sliced grapes, sliced celery, pecans, and I think a bit of lemon juice mixed with yogurt and a bit of mayo. Really crunchy and refreshing.

Otherwise I had a fat people salad with mandarin oranges, grape slices, strawberry slices, bananas, and marshmallows mixed together with whipped topping until fluffy. Yum.
