Californian here, and I am intent on cooking a good southern Chicken and Dumplings tonight. Can someone give me a proper southern recipe that I can follow? I've never attempted to cook this meal before.

No all the measurements are in scoops out of a five gallon bucket.

Chicken breast, 1 whole bone-in (weighs about 2¼lbs)
Water, 2 quarts
Flour, 2 cups
Yolks, 3
Egg, 1 whole
Water, as needed
Salt and pepper, to taste

Place chicken and water in a pot.
Set to high heat.
When just bubbling, lower heat to maintain a low simmer.
Simmer until liquid is reduced by about half in volume, skimming scum from time to time as it forms.
Remove breast from broth and strain broth through fine sieve.
Bring broth back to a simmer; meanwhile, combine flour, yolks and egg.
Add just enough water to yield a stiff, but workable dough.
Add salt and pepper to the dough to taste.
Drop balls of dough into the simmering broth and simmer 3-5 minutes until cooked through; meanwhile, remove bones from chicken.
Pull or shred chicken meat and place in broth.
Salt and pepper to taste and serve.

That's close to the original. The original used a whole hen rather than just the breast. The reason I recommend breast is because reasons, but use a whole chicken if you'd prefer.

I prefer Pennsy style, which is thickened with a white roux and has some vegetables. The dumplings for that one tend to be flat discs or squares more similar to pasta than dumplings proper, but actual dumplings are not all that uncommon. Pennsy-style is sometimes called "dutch pot pie."

Sweat a mirepoix (1 part carrots, 1 part celery, 2 parts onion. Can be a rough chop, youre going to strain this out.) in your stock pot before adding your chicken and water if you want to go ahead and make a classical stock. A few Bay leaves and garlic cloves
too.

I'm attempting to redeem myself today.

I have a a sausage jambalaya on the stove right now that should be done in 45 minutes. I used a cup of tomato sauce, 2 hillshire farms sausages, 2 cups of long grain rice, 1 cup of a 2006 dry white wine, tabasco & tony chacheres, a bell pepper, some parsley and 1 1/2 of onions.

I really fucked my dumplings up last night. I unknowingly used fucking wheat flour, on top of fucking up the density of the dumpings. They tasted like shit.

Let today be the day I redeem myself.

The dumplings were brown, and tasted like whole wheat bread, and because i smushed them into balls they were still practically raw flour in the middle. It was a huge let down. I've had this meal before, I've just never made it, and fucked up royally.

protip: most storebought broth is far less meaty than the one detailed in that recipe (USDA says that water with .74% meat or bone can be considered broth and yes, there is a fucking decimal point there).

yeah, they should be white. there's a type of swiss/austrian dish (both countries eat it) very similar to american chicken and dumplings that uses breadcrumb to make the dumplings instead of flour. 1 cup breadcrumb, 1 large egg, salt to taste and just enough water to form a dough. form into balls and drop into the broth, then simmer 5 minutes or so. delicious.
just a tad bit easier than american flour dumplings (which are already painfully easy... if you use the right flour, i guess).
you know for next time, at least!
