Anybody got recipes for Tautog?
Got some today, and I've never cooked this particular species before.

I'll give you tremendous bonus points if you can give me a working link to the "Battle Blackfish" episode of Iron Chef America

Cuisine[edit]

Goode (1884) said "The tautog has always been a favorite table fish, especially in New York, its flesh being white, dry, and of a delicate flavor."

Davidson recommends grilling, baking, and using it in fish chowder.

I believe they used a hodgepodge of the following methods:
fish traps
throw nets
dip nets
torch fishing at night
harpoon (smaller version than moby dick, of course)
pole spears
hand lines with lures
gaff rigs (like a pole with no reel)
wiers (sort of like a cross between a river dam and a pier)
ice fishing

My retired fishing buddy used to own a restaurant and would bring in and serve his catch if he had a good fishing day. I asked him about blackfish and he recommended "blackened blackfish."
