Nice quads. I don't generally like German knives, but since you live near Solingen it makes sense that you buy knives that are made there.

I recommend something without a full bolster, like the Wusthof Le Cordon Bleu or Ikon lines. Zwilling Henckels makes a couple half bolster lines like the Cermax and Twin Profection.

I second no bolster. My wustof 10 classic French knife had the best hand feel for me but had a bolster, took it to a local pro, had them buzz down the bolster.


To OP, I have a mix and match set. Went to several different stores, picked up every knife they had, to see hour it felt in my hand. Two F. Dicks, Wusthof, Henkels, and some calphalon Parer's/utility knives. Best set ever. Six years later still going like gangbusters.

8" Victorinox or whatever 1.4116 steel knife with plastic handle. Does a good job and you won't cringe at the thought of chopping through poultry bones.
