I want to improve my cooking skills and I'm looking for some serious cooking lessons online. Unfortunately, I'm not able to find anything.

Every set of globals I have seen have been dented by general use.
My cheap victorinox blades have seen a couple of years in a commercial kitchen with pretty heavy use, but they remain in great condition.

What the fuck have you guys been chopping your Global knives on, glass? Cleaving through thick bone?

I've used my Global 10" chef knife 4-5 times a week for the past 4 years without a single dent or chip. I hand wash it, use the spine to scrape food off the board, and hang it on a magnetic strip rack over my counter.

Probably using them as pry bars and can openers. You know, like what kitchen knives are supposed to be used for. What, you don't use the edge of your chef knife as a hammer?

You know why german knives are made of soft resilient spring steel that can't be broken even if you use it as a screwdriver? Same reason cigarette lighters were crippled about 10 years ago, and you have to get interrogated by the pharmacist in order to buy cold medicine these days. Too many retards who can't be trusted. The germans figured this out even though the japs haven't caught on yet. When a retard breaks your product because he's too stupid to breathe, the product gets blamed, not the retard. Better to make it a worse product and punish the small number of people who know how to use their tools.

Like everything, it's trained through deliberate habit and previous mistakes. I was determined not to trash my $150+ knife after graduating from years of using cheap-o ones for practice

Probably one of the most frustrating little things that I took for granted when I was younger. I fucking hate those Bic safeties. Thankfully it only takes a few seconds to pop them off with a set of keys.
