3 large sweet potatoes
3 large carrots
1/2 of a butternut pumpkin
1 large onion
2 or 3 tbs garlic
5-6 cups vegetable stock
2 cups chicken stock
300ml cream
salt and pepper
- peel the vegetables and steam/boil them until soft (I steamed them to keep the flavour in, but if you boil them just use the same water for the stock)
- dice the onion and fry it with the garlic until translucent
- put everything in a pot and add the stock (I used powdered vegetable stock and cubes of chicken stock but I only put about 4 cups of water in it)
- go to town on it with a blender. I used a benchtop blender, but a stick blender would be way easier. You'll probably have to add water at this point to get it to blend well – I hadn't added enough water to it, so I needed to add heaps to actually thin it out enough to be blended
- once it's blended, add salt and pepper to taste and bring it up to the boil. This would be the time to add other seasonings such as fresh parsley or basil (I didn't) - if you add herbs before blending it'll end up looking all vomit-like.
- add the cream - add as much or as little as you personally like
- serve with home made cheesy baguettes

this makes enough for about 6-8 people so scale as appropriate

No, the Cornish one is almost like cream of tomato soup, but with fresh crab meat. Takes a fair amount of preparation, as you make the crab stock.

>Break up crab; separate meat from shell
>submerge shell in lightly salted water
>bring to boil
>simmer 2+ hours
>strain and set aside
>Heat olive oil in sauce pan
>add chopped onion, carrot, celery and fry
>add rough chopped garlic and fine chopped lemongrass and bay leaf
>cook off fair glug of white wine; reduce by 2/3rds
>spoon of tomato puree
>tip in the crab stock, bring to boil
>add salt, pepper, fresh parsley, basil and tarragon
>add one tin chopped plum tomatoes
>simmer 45mins
>leave to stand, then remove bay leaf
>blitz in a blender, or sieve
>return to pan, simmer again until thickens (quick if blended, longer if strained)
>remove from heat, stir in fresh cream
>pile fresh crab meat in centre of bowls, pour soup over it
>drizzle with olive oil/cream/salt/pepper/chopped basil

I had a french onion and asiago soup last week that made me actually orgasm after the first bite.

Rich, flavourful broth with onions, and set in the middle to soak in was a small baguette baked fresh then spread with garlic butter and layered with asiago. Broiled until crispy, then cut into two pieces and set on top of the soup. The bread was nice and thick, so it held its shape even after five minutes.

My god it was amazing. I need a good recipe for french onion soup in general.

3 or 4 cheap chicken thighs marinated for three days in soy sauce, ipa, Dr pepper,coffee black pepper and garlic

Cooked with marinade for two days until even the bone dissolve adding water as needed.

on day two carrots whole potatoes and peas are added for two hours before turning off and allowed to coll for 30 minutes. Gets better evey day it's in the fridge
