Vegetable soup

1 cup each of red and yellow lentils
1 cup of dried peas, use fresh or frozen if you want, just add them later
2 or 3 carrots
a leek
a shitload of spinach or chard or other leafy green of your choice.
stock or water, about 2 litres
salt n pepper and other herbs if you feel like it

soak your lentils and peas for a few hours. I do it either overnight or during the day while I'm out. I wash and finely chop carrots, wash and thinly slice the leek. I sweat the carrot and leek (and the sliced stalks from the chard if there are any) in some olive oil until it's soft. drain the lentils and peas, and put them and the stock in the pot and simmer for about half an hour. chop up the greens and throw them in, season with whatever I feel like, let simmer again for about the same amount, skim it if it needs it, then eat.

yay soup!

Most curries are really easy if you make it from a paste.

1. Sear meat in oil
2. Add paste, coconut milk/yogurt
3. ???
4. Eat delicious curry

And you can feel confident since most people in South Asia/South East Asia don't have time to make curry from scratch and use paste themselves.

Macaroni Casserole
>400g of elbow macaroni
>400g of minced meat (I usually use minced beef but it can be replaced with any meat)
>couple of onions
>3 eggs
>0.5litre of milk
>Salt & pepper
>Cheese
You can add anything you've left over like vegetables, bacon etc. You can also add spices you like

>Cook macaroni
>Fry minced meat & onions on pan
>When both done put in a large pot
>Mix milk, eggs and spices and pour inside the pot
>Mix well
>Add cheese
>Put in over for 225c for about 30-45 mins

It's easy and simple. I like to cook it because you can use leftovers as fillings and it still kicks ass

500g red lentils
~600-700g each of onion and carrot
5 cans chopped tomatoes
water
4 beef stock cubes

Fry the onion while cooking the carrot, stick it all in a big pot, season, and cook for a while. I like my soups smooth, so I blend it afterwards, then bag and freeze most of it. Makes like 10-12 servings, each of which is only about 250 calories but filling and healthy as heck.

Generally Omelettes are my go-to meal when I have nothing in the fridge. They're extremely versatile, take 5 minutes to cook and have a decent amount of protein. I like to add Sausage and Cheese personally.
