How would I go about doing this recipe without cognac or even alcohol for that matter? Could I replace it with a cooking wine of some sort or even unsweetened juice?

Well I know the alcohol will be cooked away. I was wondering if there were any non-alcohol replacements that would be similar in taste, at least for the end result.

Yes, the cognac gives it a really good flavor. You could probably substitute it with brandy, but otherwise I recommend just going for the cognac.

So am I but I don't let that stop me. Alcohol's something I consider super important when it comes to specific dishes, and Steak au Poivre is definitely one of those dishes.

Warm for sure. You can freeze extras and reheat them later, but warm and fresh are where the god tier crepes are at.

Just look up more recipes that require cognac or brandy and use that up, and drink it while you cook. That's what I do.

The only thing that's stopping you from using a not-so-common ingredient is yourself. If you have it, find a way to use it.
