Any suggestions for a "buy it for life" mandoline? I'm looking to make things like sauerkraut quite often, but the prospect of julienne and waffle cut vegetables is also quite tantalizing.

Zyliss makes some good stuff as well though I prefer their older stuff, the older ones that I think were better made are also hard to find.

Hey Op, I recently was on the hunt for a good mandolin ears well. I also make lots of sauerkraut and other lacto fermented veggies.
America's Teat Kitchen did a review of mandolins a few months ago and I bought their top suggestion- Borner Trendline v3 Hobel. I freaking LOVE it! I'm a bit of a klutz, so the large hand guard and easy to change plates works really well for me.

I highly suggest reading the article and deciding for yourself.

Matfer is the best. I own it.
Made in France.

Best mandolin cutter I've ever used.

Also, Never, EVER get a mandolin with a slant-blade, they are VASTLY more dangerous.
Mandolin like Matfer with blade at 90 degrees.
Holding your fingers back you can even use your palm to push more vegetable through and not cut your palm, the same can not be said for mandolin with angle blade. Very dangerous.
