Your favorite pizza places most likely use canned tomatoes at some point. No way they are using fresh all the time because the quality would suffer from out of season tomatoes.

No, canned are best out of season. Places just used canned cause its the cheapest way to transport them usually. Frozen vegetables are far better, but people tend to not freeze produce that's acidic enough to just can readily.
