You have to understand that dishes like this are just regional aberrations borne from some old tradition that never died out due to their isolation. You can't say this is representative of "authentic Chinese cuisine" because the average Chinese person wouldn't go anywhere near this shit.

All countries have stuff like this. Japanese have Okinawans eating fermented fish innards, the Italians have Sardinians selling casu marzu. Trying to label either cuisine on the basis of what traditions their remote regions choose to preserve is just as asinine.
