I hope some sane person has already said this, but the best cookies are the ones which are crunchy on the outside and soft and chewy on the inside.

If I wanted fully crunchy cookies I'd just buy shitty Nabisco. Softer/fluffier cookies are okay but unless you make them yourself they tend to have too much oil or corn syrup in them.

I've added in more flour to make puffier cookies before. Not bad but it tastes more like a muffin top than a cookie.

So best cookies are the crunchy on the outside/soft-gooey-chewy on the inside ones.

I like both. I was recently backstage at a comedy venue with a friend who knew most of the comedians performing and there was a huge platter of cookies, half of them crispy and half of them soft. Once I saw that platter that was it, my whole evening was eating those cookies. The woman who bought them(from a local bakery right around the corner iirc) made a comment about me stuffing my stupid face with cookies but I didn't even give a fuck. They were delicious. I was taking 1 crispy cookie and setting a soft cookie on top of it and eating them like a sandwich.

Here: Anon's Beast mode cookies

>300g of AP flour and Spelt flour (15% spelt, rest is Ap)

>1.5 sticks of butter (more if you want it buttery)

>2 eggs

>1 and 1/4 cup of brown sugar

>3/4 cup of white sugar

>3/4 tsp baking soda

>Pinch of salt

> 5.5 oz of 50-55% Dark Chocolate (Chopped)

>5.5 oz of 70-75% Dark Chocolate (Chopped)

> Hint of vanilla (1/2 tsp to 1 tsp)

> Cream butter and sugar... Make sure butter is chill but not frozen, just malleable and cream with sugar

> Add eggs and vanilla to sugar cream

>Sift Together flour, salt, baking soda.

> Slowly mix in flour to egg cream mixture

> Add chopped chocolate to dough

> Important part: Chill dough for 24 HRS

> Also: Save the chocolate shavings or crumbs and use for topping

> Bake cookies (depending on how compact you want it, higher temps= more compact cookie, lower temps= thinner cookie)

> I personally bake it at 375 F for 12 minutes (rotate cookie sheet @ 6.5 minutes)
