I just grabbed some bacon out of the fridge. It has about 3 weeks from its "use by" date, however the flesh bit (it's short cut) is starting to look like it's breaking down - I can't describe but it's like the meat is flaking apart - and some parts are starting to turn clear.

No smell, no discoloration other than the clearness and no bacterial goop.

Still good?

The reason bacon has an expiration date is because it gets naturally cooked by entropy, and therefore will go 'bad' if cooked after its expiration date, where it has already been cooked.

Basically, it's been cooked for you by the universe, so you can just go ahead and eat it.
