Hey /ck/

What is your opinion on this recipe? I've been having some issues with the breading and am wondering if I should add an egg or two to the chicken marinade before breading. Opinions?

I don't remember putting sriracha in my general tso's chicken, but what sort of issues are you having with your breading?

If by breading you mean the corn starch part then I don't think an egg should be necessary. I usually use potato flour (dont think it matters), but if doesn't stick well you can put some flour in a plastic bag, toss the chicken in there and shake about for a while.

Well, I think part of my issue is the heat isn't high enough on the oil (bought a cooking therm to fix that) but the breading just falls off in the oil. The chicken comes out mostly breading free and the oil has a bunch of shit floating in it.

Also, can I just use vegetable oil for this or should I get some more peanut oil?

High heat, plenty of oil to the chicken (don't let the stuff touch the bottom of whatever you're deepfrying in, also too much chicken will lower temp of it quite a lot), be careful about touching the chicken in the beginning before the stuff gets hard.

Pat your chicken dry with a paper towel or something before you coat it with coarnstarch.
