I grew up on dominoes Chicago deep dish growing up in the 90s. Blew my mind to learn how Chicago actually does pizza. I wouldn't know where to start on trying to get a real Chicago pizza without actually going to Chicago.

Not sure what style of dough I'm making. The recipe is loosely from a New Jersey pizzeria. It fits neoolitan in terms of ingredients though. I have a 2 month old dough base/mother that tastes like heaven.

Georgia isn't too far off from NY style pizza. I've only been there for several months and actually got a job at a random pizzeria when I got into an hour long conversation with the owner and a qt cashier there. One thing lead to another and I was working there the next day. I don't think there's anything to the whole "NY/NJ tap water" secret ingredient either. Tastes the same to me. The only thing that I learned over the years is if you make a dough from a base rather than scratch every single time it tastes more like a NY style pizza in terms of the dough alone.

All I can say is that the pizza pictured is personal sized so it's not like you have to worry about not getting a cheese piece. Also I still recommend to anyone to try cooking a pizza without the cheese really hot and then throwing the cool cheese on at the end to melt slightly.

I rarely eat pizza. I don't know why, but for some reason it never fills me up, unless I vastly over eat. The only pizza that I can eat just 2 slices of (or well 1 because 1 slice is 2 slices from most places) is Sam's Club. Otherwise I'll eat 4 pieces, which I know I shouldn't.

Fuck yeah! I'm from Chicago so I love pizza but only thin pizza. Don't like that deep dish overhyped bs. Wayyy too much bread for me. My favorite is sausage pizza with some grated Parmesan and crushed red pepper.

Just made pic related few days ago. Mexican style pizza. Blacks beans, tomato sauce, fresh jalapeños, chorizo, onions and cheese. Flame as fuck! One of the best pizzas I've ever had in my life. Can't wait to make it again.
