I really think that recipes are the reasons so many people are "bad" at cooking. They'll leave something in an oven or on a skillet as long as the recipe dictates, even if it's done sooner.

People who habitually burn food are just retarded and I would say that burning food is the most common hallmark of a bad cook.

Then there's seasoning, either too much or too little. Again, that's something that really only requires a little practice and common sense. Just like you can look at your food before it's done cooking and guess how much longer it needs, you can taste it as you go. Eventually you'll learn how to balance flavors. People are pigs. They're so used to having prepared and processed packaged foods that are seasoned to taste right out of the container and impossible to burn.

Your post reminded me of the way my mother cooks. She is an absolute slave to recipes. She will find something she wants to cook online, and make it exactly like the recipe says. I had an overly critical parent who would force me to do the dishes, but when I did the dishes they actually came out clean especially compared to his spit shine routine. I used to have a friend whose roommate was a terrible cook. She always bragged about her stuff being "homemade." One example that sticks out was her "eggplant parmesan." Chunks of potato overcooked in some kind of gloop. It looks like some kind of a shot at making gratin, whether a cheese one or dauphinoise, who knows? Either way it's a sorry attempt. Far too liquid, no pleading browned crust, inconsistent and thickly sliced potatoes, and it doesn't keep it's structure when served.

Nah. Recipes are there to help people learn. I think people trying to be unique with their cooking is what's awful. I've encountered it a lot with people who want to add in a secret ingredient like they know some magical thing about cooking. Sometimes it doesn't even alter the taste, but they do it anyways just to make their recipe needlessly complex.
