Which you ought to be doing anyway. Putting damp food in a hot skillet is always a poor idea. Pat dry first, always. That cuts down on splattering and gives you a much better sear. Kitchen 101.

I deglaze with whatever liquid I have laying around, beer, beef broth, orange juice, plus a shot of any dark colored liquor or red wine. Add some salt and black pepper, maybe minced shallot and/or garlic, and reduce until a wooden spoon can leave trails in it. It's different every time, but always good
