Just so everyone knows, nabe isn't the same as 'hot pot'(japanese hotpot is called shabu) but in any case, nabe is just a stew cooked in a pot that retains it's heat . A nabe party is where you and your friends all bring ingredients and toss them into the broth without knowing what the other brought, sometimes you do it in the dark as well.

Nabe is a broad term. It refers to the pot itself, as well as any sort of stewed dish. The communal sit-around-the-pot-and-share-food is one of many kinds of nabe cooking. And people do the same thing with fondue--it was big in the 1970's to have fondue parties where the host would get the pot ready and guests would bring things to eat in it. Of course that's not the only way to have fondue, but that's true for nabe as well.

We used very thinly sliced pork, chicken, and beef, with bok choy, a couple kinds of mushrooms, green beans, and a bunch of other asian veggies I'm too hung over to remember (allergic to seafood, so no fishballs. . .). Our pot is divided down the middle, so regular AND spicy broth, on a butane burner in the center of the table. Super yummy!

When I do nabe, we have a ladle to scoop the food into our bowls. No one uses their chopsticks into the nabe pot. And if you get the saltiness of the soup just right, it seasons everything and is heaven with beer.
