Well, it is when it's not made authentically. Proper Irish stew fucking sucks. Water, mutton, onion and potato does not a tasty stew make.
I made mutton stock from hooves and knees, sauté some chemically tenderised mutton cubes in mutton tallow, add the stock, some potato and some pearl onions, then thicken the whole thing with a tallow-roux compounded with finely minced onion, freshly powdered caraway and freshly cracked peppercorn. Also mutton Knorr cubes instead of salt because fuck you, that's why. Pretty sure it's not meant to be thickened, but it'd otherwise be more soup than stew, no?
