What are some toppings that you wish were more popular with pizza places?

A friend of mine wants to open a pizza shop and he wants me to help him run it. We have a few pizza shops in the area but they are all big chain places so I figure our gimmick would be that we are non chain and a little different.

I was thinking we have some traditional and popular toppings but we also add some unconventional toppings.

I make what I call pizza calcotada from time to time. That is, a pizza with red bell pepper sauce instead of tomato sauce and smoked scamorza instead of mozzarella, topped with Spanish leek and shredded lamb.

It's pretty damned good.

I recently made a "Korean BBQ" pizza.

Shredded beef in a Korean marinade and sriracha. Green onions, leeks, scallions. Used mayo and marinade for sauce.

It was okay. A little too heavy and a bit too salty. Could be a lot better with some tweaking and more varied ingredients.

These are underrated post. Keep cost down by buying locally and direct from the source (ie a farm or local butcher) and be appealing to the senses. Sight, sound, smell, etc. Hipsters are a good target aesthetic.

I love making pizza's, I've actually gotten really good at it, so I've started going for unusual pizza ideas. No, they're not that unusual, and yes, I'm sure you've had them as well, I get my ideas from somewhere though.

Breakfast pizza, I use gravy as the sauce, ground sausage, sausage links chopped, bacon, potatoes, eggs mixed in and fry an egg on top.

Philly Cheesesteak, Steak-umm, cheese whiz, grilled onion and pepper (i know, but the pizza needed more), sometimes mushrooms.

Taco pizza, refried beans and taco seasoned ground, fresh lettuce, onions, tomatoes jalapenos, sour cream and crushed Doritos.

Buffalo chicken, breaded nuggets chopped (or pulled chicken), potatoes, onion, buffalo sauce (with blue cheese dressing).

Cheeseburger, chicago dog, chicken alfredo, pick a dish, make a pizza.

You're vegan? Fuck it, you get a personal pizza. Your crust is a reasonable vegetable of your choosing (eggplant, celeriac, etc...).

By the way, may be just the case with the US, maybe even just the case in Florida, but celeriac, shallots, leeks, boniato, nettle, parsnips, are all around, but never will be used enough IMO. All are fuckin delicious.
