I'm making a beef stir fry this week.

2 things:
1. I've only recently started to cook and in the past few weeks I've made teriyaki chicken and thai peanut chicken. Is there a sauce I could use for the stir fry that's different enough from those two? I'm trying to make something new each time and I didn't want to keep making the same sauces each time

2. What are some good veggies to use in this stir fry? Anything unconventional, I'm not a big fan of water chestnuts and snow peas and was wondering if there were alternatives (so far I figure I'll at least be using red bell pepper, sliced baby corn, and baby bok choy if i can find it)

I had this problem with eating and chronic pain.

I always had the chronic pain, but the idea and act of eating made me extremely anxious and my muscles tensed up, making it much worse to a point where I even decided for a while eating itself was causative, not just a correlation.

I still haven't fully worked my way out, but it has gotten better. Just try to think why you became this way to begin with, and uproot any underlying sources of internal conflict or anxiety. Try to reconcile these things. And if you can truly say there's an absence of any other hard mechanism causing you to puke, just try to focus on the fact that it's fine, and then let it slip into the back of your mind, slowly.

So I bought this lodge a month or so ago, been cooking nothing but bacon on it. I have some concerns though.

First, I feel like I may be cleaning it wrong. I always have this gunk at the bottom of it, today was even worse (more on it later) I usually try to just scrape it with q spatula and wipe it off, but never works. Don't think it is rust. Pretty sure it is just the bacon grease. How do I get it clean perfectly? Tried running some scaling water in it after it cooled.

Also, should I try seasoning with something other than flax oil? That's what I used as my initial seasoning, and after cooking the last time, i decided to heat some flax on the burner. It was insanely sticky this time though, which was distressing.

Cheer

>> No.6481011

boiling coca cola can get rid of the burnt food at the bottom of a pan so it should be able to help with removing that gunk.

also i like seasoning with sesame seed oil whenever i can afford it.

>> No.6481017

>>6480997

That looks like burnt food stuck to the pan. Scrape it off with something hard or abrasive.

Any food-safe oil or fat works for seasoning a pan. Nothing wrong with flaxseed oil.

>>stick this time
More time bro. Heat the oil until it forms a hard layer. If it's still sticky then you either applied too thick of a coating of oil or you didn't heat it long enough (or perhaps hot enough).

Alright, I'll do that when I get home. Is steel wool too abrasive?

Anyways, I'll give it some more seasoning layers when I get home. What's the best way to go about cleaning cast iron? Should you let it cool completely before starting to clean? Should I oil it and when I'm done?
Thanks anon

>>6481011
Okay, I'll try that. I've heard that coke works in toilets, so this makes sense.

Also might try the sesame oil.

>> No.6481037

>>6481019
>Is steel wool too abrasive?

Nothing is too abrasive for cast iron. Worst that happens is that you get it down to bare metal and have to season it again.

>>What's the best way to go about cleaning cast iron?

You mean for normal everyday use? Wipe it out with with a damp rag/sponge or use a scrub brush, while it is still warm.

If it's really nasty or has a lot of food burnt on it then scrape off as much as you can manually, then stick it in the oven and run the self-cleaning cycle, then reseason it.

It's not necessary to oil it when you're done, but do make sure it is dry before you put it away. If it's damp then that will promote rusting. It's best to clean it while it's still warm, and using hot water. That way the residual heat in the pan makes sure it's dry when you're done washing it.

>>coke
It works because it's acidic. That will also strip the seasoning from the pan, requiring you to re-season.

>> No.6481051

>>6481037
Alright awesome. Thanks for everything based anon. I'm gonna go pick up a scrub brush and give it a nice clean. Don't really wanna strip the seasoning again though, so I don't think I need to go that far.
