Gluten Free is just mildly annoying. Like really if people want to buy expensive specialty items IDGAF. It bothers me that items that don't usually contain gluten are marked as gluten free, like gluten free cheese or gluten free salami or whatever (yeah I know wheat can and is used as a filler in some processed meats, whatever) - but it would only ever become a problem if and when people started just taking normal products that are high in gluten and reducing the gluten in them and it became the status quo. Like low gluten pasta or some shit. Like how so many items are exclusively low fat. Seriously the other day I was at a grocery store and literally every single instant cup soup was low in fat. LIke nigga I don't want to eat sugar carb water with incomplete proteins, I want fat in my cup at 3:30pm to get me through the last stretch of my work day.

Low fat is truly the shittiest trend ever. It makes food taste like garbage, it almost always replaces fat with sugar and it ignores the fact that fat is an essential and super important part of the diet. Enjoy your lack of nutrient retention and hunger. Also

That doesn't make much sense to me. If you have celiac disease--diagnosed by a doctor--then the doctor will surely have explained to you what you can and cannot eat. It's actually really simple: people with coeliac can eat most foods, there are very few things to avoid. It's silly to think that the labeling is catering to those people because they already know what they can and cannot eat.

The gluten free thing is marketing pure and simple. It's taking advantage of people who think they have various diseases but really don't. It's taking advantage of people who misunderstand the whole gluten thing and think that gluten makes them fat or some silly shit like that. I know the latter sounds silly, but there really are people like that. I remember watching a news segment where they interviewed a bunch fo random people on the street and asked them about gluten. Not one of them knew what it actually was. But plenty of people thought it made you fat, or that it caused autism, or that it was a "chemical made in China", etc, etc.

Why does it matter that they're assholes?

As someone who actually does have multiple severe allergies, to a point where I don't even attempt to eat out, I'm pretty well unbothered by it. In fact, it's useful. All the attention and catering they get just makes less ambiguous packaged food for me, and more varieties of food that deliberately don't use common allergens.

Also, a good deal of disease and bodily maladies can be traced back to chronic inflammation and low level food allergies. Dispelling the myth that you can inherently eat anything you want simply because you exist, and to no ill effect, is also very useful. Physicians actually do food allergy tests now, and in the last 5 years even, packaged food is drastically changed in ways I would have absolutely never expected. Things were fairly bleak when I had to start on all this.

Yeah, they're pretending and just riding the trend, so what. Their effect on the greater whole is net positive. This is uncommon for trend riders, so I take it as being fine enough.

In my case (this was probably 6 or so years ago), I was willfully naive a few times, because I know it just makes a few things shitty for a few days. When someone comes to the pizza place and says they have celiac or don't like gluten. Sometimes they do have the allergy, but other times they don't and you can tell when they take the free cookie offered to every first visitor. Because of them we have to wash everything down and fill new containers with toppings in case someone touched dough and then the topping box. Their stupidity has gotten me much more clearly labeled food and far more options. I don't eat processed at all, but it's neat to grab a bag of chocolate chips and have it in great detail tell you explicitly how it's manufactured and from what.

I used to part time at a Red Brick Pizza years ago and it was hell on earth when someone ordered a Gluten Free pizza since it required us to wear new gloves, use a special paddle which was annoying as fuck because it was smaller and harder to handle, and use a special baking brick to put the pizza on that made it 3x harder to get the paddle under the pizza when you wanted to get it out.

After some faggot complained that we let his Gluten free pizza get too close to another normal pizza that was in the oven and demand we remake it, the boss made us keep a certain distance between the pizzas, so that's less pizzas we could bake in the oven at one time.

And since we were located in a particularly affluent business area, there were tons of women in suits who ordered them even though I'd see them walking around with pretzels and sandwiches and shit on other days.

Before the whole GF fad, she just didn't eat out, ever. Now, with every place having GF this and GF that, she's tried it a few times and it's been an awful experience. So now, she just stays with the not eating out at restaurants thing.

I've taught her a basic cooking philosophy from my part of the world and that is "if you can't have it, don't try to."
I know that sounds defeatist, but think about it: how many times have you had an alternative to X where it was as good or better than X? I can count on the toes of my right foot how many times. And I'm missing one of them (frost bite).
Usually, GF versions of things fucking suck in comparison to the original. Same with vegan, vegetarian, sugar free, fat free etc etc etc.
Just stop trying to make something that's meant to have X without X and you'll be happier. Rather than a shit-ass slice of GF cake, have some parfait. Rather than mushy-as-fuck GF pasta, have a risotto. Rather than crumbly GF pizza, have some tacos (on corn tortillas, of course).
