How do I cook dank fries?

you need duck fat and truffle oil

soak in water to get the starch out, dry, fry once to cook the inside. cool. fry again to crisp them up. salt immediately. apply any other seasons you like. Rosemary is good. Black pepper is good. Cajun seasoning is good. Your favorite bbq rub would probably be good.

Do you like cheese? Make a mornay with sharp cheddar and gruyere. pour over fries. add bacon and/or jalapenos.

maybe add some parmesan and garlic powder. or even garlic infused olive oil.

This is really all you need to do.
Most important parts are soaking for a few hours, blanching at a lower temp for a bit longer to par cook, then frying a second time at 350 for the crisp.
