A roux is made by adding flour to fat, and cooking the flour before mixing in a polar (water-based/wine/anything-that-isn't-fat) liquid... if the flour is added to the polar liquid before the fat (nonpolar), it will be lumpy. It'll still successfully mix oil and water if you don't cook the flour, but it will taste raw.

I know this anon is far gone but I figured I'd throw it on the table in case it helps anyone else. Your roux/milk ratio will be much lower than you might think. The first time I made a cream based soup I ended up basically making library paste because I didn't trust in the ratios in the recipe.

its just flour eggs and milk. add in onion or garlic powder for flavour. use canola or a high smoke point oil. get the oil very very very hot, like 450-500 degrees and use a lot of it. I used like a half oz of oil per muffin slot and brush the sides too so they don't stick. when the oil is super fucking hot put in your measured amount of batter or whatever the fuck u call it. turn down the heat to 350 and watch them closely. pull them out when they aren't wet inside anymore and can hold their shape and don't burn them
