Well, it wasn't MASSIVELY rare, but it certainly wasn't every day. You had chicken when you had too many cocks, or when a hen was past her laying years. In that case, you'd cook 'em low and slow because they were old, tough birds. I'd be more concerned with the dumplings than the bird, along with the circumstances you're cooking in. Does the party lug along a cookpot? If you're camping out, something like sizzled smoked sausages, cheese, and eggs along with some traveling bread would be fairly authentic. Remember that adventurers are fairly well-to-do and could afford to get some good food unless they're some level 1 scrubs.

When my group was in town, I would make stews with pot roast, turnips, and onions. On the road, it's traveling food, with hard-wearing fruits, sausages, and flatbread.

If you're near a farm, you can count on some eggs, some cheese, and a bit of meat. Without trying to derail the thread or turning it into a shitstorm about historical accuracy, if we assume the medieval 'known world' as a point of reference, food from the americas wouldn't be appropriate, so toms, potatoes, beans and turkey are out. Sugar was extremely pricey, white flour was a sign of affluance. Prime cuts were reserved for nobility, for lower classes offal, extremities and preserved meats were the norm. Forget about using oil, cooking with fat is the way to go. Raw veg and fruit was commonly considered harmful, so salads are also out.

Use spices liberally, they were used to mask the flavor of slightly off meat, as preservation techniques weren't very effective.

Root parsley, beets, turnips, legumes, a variety of porridges were very common filers and I'd also expect to see a lot more fish, even ones we think today exotic or rare - e.g. frogs were considered fish as well, and in England a law was passed that forbade feeding workers with salmon more than 4 times a week.

Based on this, I'd suggest porridges and stews, hearty soups, pies, slow baked cheaper cuts of sheep, goat and pork with root veg and brown bread, grilled or baked fish, sausages served all at once.

Forks are a relatively late invention, so use knives and spoons.

Simple rustic stuff is best. Get a good wedge of cheese or 4, bake a few different types of breads. Cook a mountain of meat on the bone, chicken or turkey legs are probably the easiest.
