There a difference between lamb and other meats?

I've eaten beef, goat, ox, venison, and bison just fine.
But whenever I eat lamb I get the shits.

Fucking this. Even 'nice' restaurants, they'll charge an arm and a leg for a lamb chop and it will be like rubber and dry as fuck. And whoever thought mint jelly was a good idea should be shot.

Leg of lamb slowly spitroasted? That's a whole other story. Simple as fuck too, all you need is fresh rosemary, sea salt, olive oil and whatever other little amounts of pepper or shit you want to rub on there.

Yep, I always loathe to claim that fat equals flavor, for example I really think grass-fed beef can be amazing if it's good quality and cooked properly, but on lamb those bits, especially when they're crispy and salty, are fucking amazing.

In that pic I posted, you notice that slice on the left has had the edges trimmed? That's because I cut off the best parts (to share with a friend who had never had lamb before).

Also, since it's so much you will definitely have leftovers unless it's an Easter get-together or something, and when the meat has cooled in the fridge for 12+ hours the fat has the amazing texture and taste when it's cold. Overall it's not super fatty, other meats are much worse, but those bits in moderation are pure heaven.

I never really take pics of things so here's just another of the same before it was cut.
