Not sure why people don't like dealing with exact measurements, as it doesn't automatically mean no improvisation. It just means you know exactly how much you are changing, which makes it easier to replicate the next time, and easier to share the recipe with someone else.

I don't follow a recipe exactly from point A to point B after the first time cooking it.
Using measurements doesn't mean you don't know ratios. But not using measurements again, limits you ability to precisely recreate something and it limits your ability to share what you've changed with someone else.
We should start deriding chemists for not eyeballing things too! I mean, shit, don't they know the ratios they need? Why measure anything?

Re: measuring. Some things, especially savory items, precise measurements can mislead you when you ought to trust your taste first.

Other things, particularly baking and MG, are better served with precise measurements. I like to make small adjustments in many of my baking recipes and only by knowing what I've used before can I know how to edit.

First, your comment was stupid. Very few cooking channels on YT have the person chopping absolutely everything. You typically get a couple seconds showing them chopping, etc.

It's also stupid because mise en place doesn't mean having everything chopped in advance,etc. It also doesn't make sense to do it in advance when there are other time sinks in the cooking process that you can fill with chopping time.

Some cuisine is a little more complex than the boil-in-bag stuff you encounter during your lunch shift at Olive Garden.

The second problem is your assertion that you can do something better than many others - something that is simple and accessible to anyone with a cell phone camera - but then don't care to prove it.
