Lately I brew with a pour over with paper filters because I don't care for the grit, I know I lose a ton of the body of the coffee, it's very obvious. Otherwise I use a nice French press somebody returned to my job because the handle was slightly loose (60$ press for free :P)

As a Starbucks supervisor I can assure you probably 60% of the time if it's past lunch time the coffee is not fresh. Because of Amerifatness brewed coffee is just a thing we also carry, it's all diabeetus in the evening. Find a reserve store, pay a little extra for a clover brewed coffee. Could you be using too much coffee for your cup? Instant coffee can get much, much more bitter and concentrated than normal black coffee or even espresso, since it's pre-extracted and you're just dilluting it with water.
Try putting in about half or a third of the amount you'd put in if you were making black coffee. Work your way up from there until you find a spot that suits you.

I recently bought a french press and a ceramic burr grinder

I'm not sure why I took so long, the coffee is far higher quality than drip coffee and it's also easier to control the temperature

I used to put milk in my coffee to hide the slightly bad taste of drip filter and also to cool it down faster since drip makes it far too hot, where the french press the coffee comes out the perfect temperature and doesn't have any of the bad taste from a filter that's hard to clean out

A small amount of pumpkin spice blend mixed in with the ground coffee in a pourover is a nice occasional treat that does avoid the cloying parts of the syrupy drinks. I'd recommend trying it, for sure. I use a teaspoon of cinnamon, half a teaspoon of each nutmeg, ginger, and allspice, and three whole cloves to 40 grams ground coffee.

A bit of proper grated ginger root is also worth trying, but that option is really powerful, so there's not much point in using other spices with it.

That's a little snarky, considering most historical articles are written by people who didn't experience the actual history. It's a pretty quality researcher though. I noticed she's an Entertainment writer, but her bio states she has an extensive mug collection. Maybe she's just more monied than you and recognizes antiques.

I'm in my 40s and though I've rarely turned over anything in a restaurant other than for a curious look at finer china, such as a tea cup or beautiful plate, I'm absolutely positive I've dined out more than 40x where these mugs were in use. They were rarely chipped, cause they were so heavy, and obviously look tip-resistant. I'm pretty well traveled, so I guess I might have popped into more of those cutesy old time diner cars.

It's sad that their demise is cheaper made items no longer requiring USA made. A lot of more amazing artistic china companies in Britain, also, lost out to eastern european trade for similar price reasons. The better collectibles are due to the end of long standing pattern lines. I get a lot of nice things off Replacements Ltd, where supply and demand doesn't always mean such a big markup. If you're patient, you will eventually get a nice serving set with all the pieces without all the crazy prices of ebay hunters. I'm trying to remember /ck's china guy's pattern, but it's there! Is home roasted coffee supposed to be shitty? I've been roasting my own coffee for a number of months now. The coffee roastery that I normally buy my roasted beans from sells some of their single-origins as raw beans as well, so I can compare my own roast to that of a professional roastery. The biggest difference is always that my coffee has less overall aroma. Smelling the coffee grounds of my own roast vs. the professional roast seems like it's a very similar aroma, mine just has a lot less of it. The same is true for the flavor of the brewed coffee. It's almost like my coffee is stale right off the roast, even though I'm drinking it 3-14 days after roasting.

As for the specifics, I'm roasting in 200 g batches (in green beans) in a large cast iron pot. I don't really have any way of accurate heat control, so I basically just pre-heat the pot for 10 minutes on medium-high heat, add the beans, then stir with a whisk constantly until they're done. I reach first crack at around 10 minutes and stop the roast at 13 minutes, which I'd say gets something like a full city roast. I then dechaff by pouring the coffee between two strainers, then spread it all out on an oven sheet and fan it until cool. It takes about 5 minutes to cool the beans to room temperature. The resulting roast isn't terribly uneven in that there aren't any obvious scorched spots, though the beans always seem to be a little bit darker on the flat side. Then I put the coffee in a zip-lock bag, press out as much air as I can, wrap the sealed bag in aluminum foil to protect it from light and let it settle for about 3 days.

I'm wondering if they're just selling me worse beans than what they use themselves, or if there's just something magical about the professional roasting process that gives their coffee a much better flavor.

I need some advice. I made macaroni and cheese, but wanted to spice it up so I put some caribbean jerk in it. I put way too much in, and so I threw some iced coffee in it to calm it down. But I forgot I had grain alcohol in my coffee and that just made it worse. So I googled ways to make food less spicy and someone on a forum said ketchup helps. I skimmed the video. Looks like brew time was 4 minutes, which is Ok, but he says to let it sit after you plunge for a couple minutes. Don't do that, the water is still in contact with the grounds and is still extracting.

Sour = under extracted

Since you're using preground, which is ground for drip, you need to shorten the brew time. Play around with 3-4 minutes TOTAL time the grounds are in contact with the water

$100ish on the Feldgrind. Decent and durable electric grinders don't really start until used Bunn G1 territory and it's fuckhuge. There's lots of decent ones in that price that are decent but not that durable like the Preciso if you're fine with that.

But the Feldgrind (or Lido) are not slow like the Hario despite being manual. I started with a Porlex and upgraded to a Lido 3. Porlex takes multiple minutes, Lido takes maybe 16 seconds. It's a whole different game. And you'll never need to replace it unless you go full coffee sperg like me.

For the burrs, you can gett Bunn burrs much cheaper than the $450 Ditting burrs. They're not as good, but still pretty good. But don't do that if you may ever use it for espresso.

Flavored coffee just means more thorough cleaning, it's not that bad if you're switching the burrs anyway.

Agreed on the Dittings, absolute top tier for brew and they beat out the Compak K10 and Mythos Plus for espresso when I owned all three together. These magical Ditting burrs are actually why I chose the EG-1 to upgrade to over something like the Monolith Flat.

But the Bunn burrs are still better than any home grinder. It's a step down, but you're still on the second highest step. I'd say it's worth the $200ish difference between the sets to own the best, but that's up to the buyer.

I'll make sure to post when I get it! The burr is a Compak R80 burr, which is basically Compak's Ditting 804. I'm mostly hoping for a similar grind profile to what I have now but a less painful for espresso use, with a few other cool features.

Another interesting thing, they're planning to make a screwless magnetic set like the Tanzania too that can be retrofitted to older models. My discount was substantial enough to buy the new burrs and have some left over, so why wait? Probably won't buy em anyway though unless Socratic or someone shows em performing way better. Which I'd call unlikely since the holes are in the bean breaking part rather than the actual slicing part.

Strietman CT1. I've got a Caravel, La Peppina, and La Pavoni on display that I don't really use other than to mess with on rare occasion anymore. Not really into pump machines for home use so I don't own any of those. Too unforgiving, too inflexible without wasting coffee, a pain to clean and maintain, and too much to break.

For not spending thousands, I have made some shots with the Caravel and Bunnzilla that can stand next to anything I've had, at home or in a cafe. It's a bit of a routine to preparing, using, and cleaning it, and the shots are fucking tiny. But they taste just fantastic. It's way too good for something you can get for $450. I swear Dr. Emidio Salati found a way to put a little bit of his soul in each machine when he invented it.

The Strietman is much nicer to use all around and more flexible with the kind of shots you can get. I can pull basically any ratio I like instead of being stuck with 1:1. The quality is overall better too, with the precision screens and baskets and all that. It's also a hell of a lot more expensive.

Anywhere from $200-$600 depending on which version, the condition, if it's been refurbished, if the seals have been replaced, if it's been converted to 110v, etc.

Personally I'd only get one of the first three models (VAM, Arrarex 1.0 and Arrarex 1.1) and only with all the parts. Then do the seals and 110v element yourself. That puts you in the $350-450 range.

Baratza grinders aren't built to last at all. The Bunn will likely outlive the grandkids of people born today. The grind quality is generally not as on the Baratzas nice either.

Your things you've heard on levers are mixing up a couple things.

1) Basically no cafes use manual levers, any levers there are spring levers

2)These giant spring levers do take a long time to heat up, but you won't be tossing shots for that unless you're pulling to early or don't flush

3) You may be mixing up where some small home closed boiler levers overheat because the pressure takes it past boiling, that's the main home lever complaint I see

The Strietman is an open boiler manual lever. Takes less than 15 minutes to get it to full temperature (I pull at 200f), which is easily verifiable by sticking a thermometer in the open boiler. It won't get too hot either, and you can check that with a thermometer too or even drop a pid in to keep it within .1 degree.

Pre ground coffee is usually ground really fine. This means more surface area is in contact with the water.
A french press makes use of immersion brewing, meaning the water and coffee are in contact for a prolonged period, and usually benefits from a rougher grind.
With pre ground coffee in a french press, you get over extracted coffee because it's leeched eeeeverything out of the gorunds.
Try again with fresh beans, ground up pretty rough.
