I've been to a few. Pretty decent. Although most meals I eat are pretty heavy on meat or seafood, they give me a chance to try something and spread my cooking expertise out a little bit. There's a few things you can go for that won't suck:

1. Pretty much any kind of bread or cracker
2. Shortbread fingerprints made with coconut oil or shorterning in lieu of butter and any kind of fruit filling
3. Certain kinds of Korean jeon, although you'd have to go out of your way to find vegan kimchi
4. Xinjiang pumpkin dumplings, skip the lamb fat
5. Rice noodles with lime-chili sauce and some kind of pickles, like do chua
6. Any kind of Chinese braised vegetable
7. Fried tofu with a soy-based sauce
8. Refried beans without meat, tortilla chips
9. Grilled vegetable fajitas with guacamole
10. Hummus and baba ganoush with pita
11. Fried eggplant with tomato sauce, fried tomatoes, etc
12. Pumpkin and coconut cream curry (absolutely fucking delicious)
13. Tomato and peanut butter curry (also absolutely fucking delicious)
14. Tagine with everything but meat
15. Vegetable fried rice
16. Sesame sauce noodles or even dandan noodles, hold the pork

You can now get cheap hummus by Busch's. They have a hummus mix that you just add a can of garbanzos.

You can buy a pack or two of pitas and cut them in 4 pieces then make 3 of the different flavors (they have black bean, red pepper and original).

Dress it up with paprika and olive oil on top to make it pretty.

I've done this one before without the chicken powder and got good comments.

Deli-Style Chickpea Salad Sandwich
(Makes about 4 cups of salad)

3 1/2 cups cooked chickpeas*
1 Tbsp rubbed sage
1½ teaspoons chicken-flavored seasoning powder
1/4 teaspoon salt
3 stalks of thinly sliced celery (about 1 cup)
2 tablespoons lemon juice
1/2 cup vegan mayonnaise
1 Tbsp spicy brown mustard
1 Tbsp agave nectar
1/4 tsp celery salt
1/2 cup sliced, toasted almonds
1 cup halved seedless grapes

Pulse cooked chickpeas, sage, chicken-flavored vegetable seasoning (if using) and salt in a food processor until just crumbly. (Note: The size of the chickpea chunks will determine the texture of the salad--for a smoother salad, pulse longer)

Transfer to a bowl and stir in celery, lemon juice, vegan mayo, brown mustard, agave and celery salt until combined. Fold in almonds and grapes and season to taste with salt and black pepper if desired.

Serve with crackers

Ratatouille is traditionally vegan

I got my mom a vegan cookbook she wanted, and she ended up making a bruschetta from it that I and my family really enjoyed. I don't have access to the recipe right now, but bruschetta is pretty simple, and I think this recipe:
http://jessicainthekitchen.com/classic-bruschetta-recipe-balsamic-glaze/
looks pretty similar. The important part is the balsamic glaze.
I would check that no one else is doing a dish like this though, since, while I don't have any experience with vegan potlucks, I imagine it might be a popular choice.
