I understand the appeal of living in a major city (I'm originally from Montréal), but once the costs hit a certain point, I really don't see how it's worth it. You get the same experience in a city less than half the size, and the cost of living absolutely plummets while retaining (or even surpassing) the quality.

Using towels to dry, or clean anything is disgusting.
Using paper towels to do the same is a waste.
I'm not low on counter space. When I prep lots of food, I clean everything off, and use the rack as overflow if it comes to it.
