Lots of seafood, some pastas, sandwiches, burgers, steaks etc. We don't boast farm to table or anything like that but I am extremely picky about what we use. We do not cheap out on any ingredients. We buy as little processed foods as possible and really use absolute top quality and freshest ingredients as we can possibly get.
We are very conscious of sourcing our seafood as sustainably as possible. Premium aged beef for all of our steaks etc. Daily ground beef for burgers etc. I have a great crew. I've let go of the reins and stopped trying to micromanage the place and trust people. Since then I've really had more time to focus on new and exciting things I've never done. Our customers trust me as their chef and they keep coming back. I'm doing all kinds of stuff these days from Asian influenced, Cajun, Southwest, Deep south BBQ. Got a smoker for the place and since then I'm doing a lot of different smoked items it incorporating smoked ingredients into specials. I guess my specialty is just finding good combinations of ingredients and just making them taste good

You can get good bbq pretty much anywhere in the U.S. as long as you pick a decent restaurant. I'm from the Northeast but even here the bbq can be great. If you're really after the source, the most authentic would be from small businesses and family recipes in the South, more than "American" American restaurants (which are more or less the same throughout the country, with some regional differences) in the South.

A couple of summers ago my mom,my sister, and I went into the woods in Maine by the side of the road carrying plastic cups, hiked up a small hill, and between us picked a bit over a pound of wild berries. At the time it was late July, so blueberries, raspberries (both red and black), and blackberries were all ripe at the same time. We washed them and baked them all together into a cobbler, and it was amazing.

The difference between wild and cultivated berries is almost night and day. Cultivated berries are large and they look appealing, but that's mostly because they have more water in them. Wild berries have essentially the same amount of flavor in a much smaller volume, which makes them all around tastier. Wild blueberries are about the size of a pea, compared to cultivated ones, which are marble-sized. Wild blackberries are about the size of black beans, maybe slightly larger, and same for wild strawberries. Wild raspberries can be a little bigger, but not by much, and still dwarfed by the cultivated ones which usually come from Mexico. Maybe they're bigger further south, I don't know. Don't get me wrong, I eat store-bought berries pretty often because it's usually all I can get, but wild are the superior option if they're in season and you can put in the effort.

A few weeks ago the student group I go to cooked a dinner in one of the dorms on campus, as we do 2-3 times a year. We each made something. I made ratatouille by my dad's recipe, but had to make do with all summer squash instead of mostly zucchini. It turned out okay, but I think I let it cook down a little too much, and the lack of zucchini was very noticeable. I think I also used a little more salt than ideal.

Anyway, two of the other members (I might call them friends, but that's less true than it used to be, due to unrelated ideological differences) made mac and cheese. Or, well, it would be more accurate to say they tried to make mac and cheese. Basically, they boiled macaroni in a pot. So far, so good, except they were using way too large a pot with way too much water for the amount of pasta. Although that's not a costly mistake, it does take longer.

Then, they had to decide where to go from there. They didn't even have a fucking recipe, or any idea of how to make mac and cheese. One says they should basically just put it in a baking pan, put cheese in it, and bake it. I suggested it might be better if they "do that thing with flour and butter" (didn't expect them to be familiar with roux) but one of them said that's "too fancy" or whatever, and the other (who doesn't quite realize how dominant the other girl is in their annoyingly clingy friendship) agreed. Then the first girl decided it was a good idea to put a little milk in it.

When it came out, she said it looked really good. It was basically a pile of wet macaroni with shredded cheese on top, slightly browned but not fully melted, and a little bit of milk sloshing around the bottom of the pan. I had to turn away so they wouldn't see me suppressing laughter.

I still ate it because I didn't want to offend her and there legitimately wasn't much other food due to very low attendance (we are a dying club). It was the saddest thing I have ever seen come out of a kitchen.

They didn't buy butter and flour ahead of time due to lack of preparation. I had my own dish to worry about so I didn't notice what they had done with the cheese (or, more accurately, what they hadn't done) until it was out of the oven. If I had noticed, I might have helped. but because of feminism, if I tell them what to do it'll reinforce their delusion of patriarchy.

I have to be careful around them because I have a personal interest in making sure the club survives, and I can't do that if they get mad at me. I only have to hang on for one more year, and I don't have to worry about the rest of the club like that. If you go to a BBQ restaurant and it's perfectly spotless you should turn around and walk out. Avoid chains like Smokey Bones. The food is tasty but if you want real southern BBQ you want to find a family run smokehouse. One of my favorite places is a small building that is barely big enough for the kitchen. Literally, only about 6 people can stand inside and order at a time. The best place in my hometown looks like it was decorated back in the 60's . Some basic tables and chairs, one of those old diner style menu boards, and the vents are always black(hopefully it's the soot from the smoker) but you just have to ignore the building and enjoy the food which is AMAZING! It is constantly packed at lunch time and filled to capacity on Fridays. I always get nervous that the seating expansion will collapse off the cliff and fall into the river.
