gave girlfriend instructions for ribs since i don't get home till 3 hours after her, I already seasoned and left in the fridge.
cover with foil and cook at 225 for 4 hours
no brainer right?
well she forgot the foil... for an hour, then opened the oven and covered it.

so it was in there for and hour drying out, does it still have the moisture for the wet cook? will it take more time since it wasn't covered? what do?
