I know it's a bit out of season but I'm making a stew so I don't have to cook anything else for the next 2 days. What do you normally chuck in for flavour?

So far all I've added is the basic root veg and meat (sausages in this case, as it's all I have).

cayenne pepper
granulated garlic

oregano
mustard powder (or just mustard, doesn't matter really)
a little tiny bit of balsamic vinegar

What kind of sausages? Their spices will add flavor. My basic stew uses chuck meat and primary seasoning garlic, thyme, rosemary, cayenne pepper and bay leaf. I always use tomatoe paste or crushed tomato too.

Brown meat (usually chuck roast)
mirepoix
Tomato paste (cook with mirepoix)
stone ground spices (rosemary, thyme, oregano, black peppercorns)
Bay leaf
either water or chicken or beef stock (never store bought, water is better)
salt
low oven for 3 or 4 hours.
I then fish everything out with a spider
either had a cornstarch slurry or beurre manie to thicken sauce and serve over veg and meat.

Okra, even though it's not in season for a lot of places.

Okra, yellow squash, zucchini, and tomatoes make excellent veggie stew. I do garlic, salt, pepper, and a little oregano with it (if I'm not adding meat).
