Fuck that shit. Any "restaurant" using bouillon isn't a restaurant, it's a fast food joint. >What about seasoned flour for stuff like wings?

I have done an awful lot of experimenting with this and my conclusion is that seasoning the flour is a bad idea. Very little of the flavor added to breading actually remains in the food, whereas it does a great job flavoring your cooking oil. That's counterproductive to me because I want the cooking oil to be re-useable for many dishes.

Whenever I make fried dishes that might have seasoning in the breading I either marinade the meat in advance, or I season the food after frying. Not only does that preserve the cooking oil better, but it's also a lot tastier.

Also, there is one Asian fried chicken dish that I make which is marinaded in a lot of crushed raw garlic. I leave the raw garlic in place when I fry that dish. You get lovely bits of crunchy garlic along with the chicken.

How so? I imagine that fresh garlic tastes a lot better than a bunch of McCormick sawdust.

And it's cooking 101 to wipe away marinades, etc, from meats before searing them to avoid unpleasant tastes from burning.

By the ledienfrost effect. Though most home cooks don't do that. They just slap spices on something, pan-fry it, and call it "blackened". They aren't doing it properly.

This is the kind of heat level you need for proper blackening.

you have a stance that identifies dried garlic/onion as a low quality ingredient, so any application of it needs to rely on it so essentially in order to overcome that problem in your mind. even further than that, when people are providing examples of applications that do benefit from the dried ingredient, you're swatting them off with subjective preferences for an alternative.

we eat lots of dried ingredients. hardy herbs, mushrooms, even seafood. garlic and onion can be dried and used in ways that the fresh version could not. fuck your boring contrarianism

>you have a stance that identifies dried garlic/onion as a low quality ingredient

That is correct.

>>when people are providing examples of applications that do benefit from the dried ingredient, you're swatting them off with subjective preferences for an alternative.

Correct. The point of cooking is to make the food taste as good as possible. So if there's an alternative that tastes better OFC I'm going to mention it.

>>we eat lots of dried ingredients. hardy herbs, mushrooms, even seafood
We do. Dried herbs are not as tasty as fresh ones because many of the volatiles have evaporated off (that applies to garlic and onion powder as well). Dried mushrooms can be fantastic--for many types the drying process actually improves them. I will happily take dried shitakes over fresh any day. And in the case of seafood, I assume you're referring to things that are dried and cured? Those get extra flavor from the curing process.

But in the case of garlic and onion, I honestly cannot think of any dish where having those dried actually improves the dish. With dry you're stuck on a loss of flavor (volatiles which have evaporated off), and they're also fixed. Compare that to fresh where you can control the taste to best suit your dish. With garlic, for example: you can leave it raw for that acidic bite. Or you can cook it to totally change the flavor. If you roast it then you end up with yet another different flavor to work with. You can fry it and get an interesting texture, etc. None of that flexibility exists with garlic powder.

I just wish people would be honest and say they use the powder for convenience.

>> No.9260488

>Correct. The point of cooking is to make the food taste as good as possible. So if there's an alternative that tastes better OFC I'm going to mention it.

you're talking about something entirely different.

i know all this food science stuff you're vaguely gesturing at to build up your wall of text. to cite it in order to make all these value judgements is an abuse.

any ingredient loses some aroma when dried. they also retain some and even change in the process. this is as true for garlic and onion as your dried shiitakes.

the onion flavour of an ingredient that has been marinated in fresh onion is different to one which has been coated with dried onion. it's different. your comments about seasoned flour are subjective. your different approach is not better - you aim to infuse the flavour of fresh onion into your chicken, whereas others like to blend the flavour of dried onion into the crust. it's different. celebrate that. don't be a snooty fag.

>Compare that to fresh where you can control the taste to best suit your dish. With garlic, for example: you can leave it raw for that acidic bite. Or you can cook it to totally change the flavor. certainly a reason to buy raw garlic as well or even to prefer it to dried - but not, in itself, a reason not to buy dried.

I wish I could. But until your post, nobody has ever stated that they tried both and prefer the taste of dried over fresh. I totally respect that.

But I assure you that 99% of the people in this discussion have never made that comparison. They use dry out of force of habit, because that's what their parents bought, or because of laziness.

As long as people are going to keep that shit up I have little respect for them. But sure, if you've taken the time to compare both and you prefer dry then by all means state as much and use it.
