About the only consistent thing is the process - a brine ferment, same as what's used for kosher dill pickles and sauerkraut. Kimchi is such a broad category that kosher dills and sauerkraut probably qualify as "European-style kimchi".

...whatever. Usually, it's like extra-chunky sauerkraut, with radish, ground hot peppers, and shrimp paste. But not always.
