I've actually read a lot about it. Most of them do get it. But there are many (mainly older and/or people from rural areas with poor access to information) who cling to old beliefs that it is unclean to defecate inside your home. The idea of having an indoor toilet is horrific to them because they believe that you shouldn't be doing that inside the house at all. Of course, with modern knowledge of microbiology and sanitation we know better, but good luck convincing some uneducated villager of that.

I mean all asian countries steal everything from each other, so there's a lot of similarities.
Japanese dishes tend to be very brothy and have lots of shit in them, korean dishes tend to have no broth or if they do its lightly seasoned. Plus the banchan, and a lesser emphasis on fish replaced with a greater emphasis on chicken and pork.
Jjapchae, korean bbq, and mulnaengmyeon are things that spring to mind for me. It's common for most meals to be served hot-pot style where everybody takes and serves from one central thing, which isnt as common in japanese dishes.

Bibimbap is also distinctly korean, and things like potato pancakes.
And of course, kimchi.

There are some cultural cuisines that aren't worth preserving. Nepalese food(and half of the rest of Asian food) is such a thing- it's food and it worked for the nepalese but it's not enjoyable enough to compete even on the principal of being unique. Most Indian food at restaurants is made up of a base that's basically just pureed onions, a ton of oil, and spices. Fatty as fuck.

Japan has some amazing food when you look past the pleb crap that isn't even real Japanese like California rolls you'll find some amazing dishes. Japanese food doesn't punch you in the face like a SEA curry would where you're overwhelmed with flavors but if you enjoy a simpler flavor with the freshest of ingredients you won't go wrong with Japanese food. Most people think Japanese = raw fish but there's so much more to the cuisine, especially if you search out real authentic places and not Japanese restaurants ran by a Chinese or Vietnamese family.

As for classifying China by region, I agree but at the same time I have found great dishes all over the country. From the dim sum in the south, to amazing hand pulled noodles up north, hotpots from Sichuan and even the muslim food in the west is really good.

You have like 3 dishes, lechon which is amazing and I'll give you that, sisig which is a decent enough beer food, and adobo which you seem to rave about but I find to be disgusting. The other dishes are all stolen from other parts of the world and made worse. I've never seen that, most other places that take food from other cultures improve it in one way or another. Sweet pasta? wtf is that even supposed to be? Best food in the country is fresh fruit and seafood but there's nothing specifically distinguishing it from other cuisines. In the region with the absolute best food in the world you produce something that's less than mediocre, I guess if I was comparing it with Russian food I'd say it's good but it's all in context here.

I definitely have only had it in the U.S., so I probably have only had the bottom of the barrel. I'd love to go there and try the real deal one day. But even the stuff I've had I've enjoyed, although it was a bit sweet for my tastes.
