I really, really hope that the hay has at least been pasteurized. Beyond that, why, what is the purpose? They are selling the core experience of the meal as the preparation of the egg by the customer, but at the same time, they interfere constantly with the customer's method for cooking the egg. The pan is too hot, and the edges burn, then the sad sack of a prep cook comes along and dumps a bunch of aromatics and butter in the pan that was already oiled. It probably costs upward of $40.00 to eat, and you have to make the dish yourself with some lowly prep cook guiding you through the entire process. The sheer pretentious effort that went into designing this meal is baffling. Why not just give the customer a pan, and an option to cook the egg themselves, free of any intervention? Oh yes, that's right, because then you'd have a gimmicky hibachi restaurant like Viking buffet. Not that I'm bashing Viking, mind you, they are legit. This restaurant missed the soul purpose of both being a service oriented restaurant, and being a self-service oriented eatery. What a complete and utter failure.

it's a fine dining restaurant that is mostly standard service with a set menu. i think the gimmick of this dish is annoying too but i don't have a problem with the crispy egg and it isn't managed that heavily, let's be real.

also hot stone or sizzling platter restaurants do this kind of shit all the time. bring you a hot stone, give you meat to put on it, then come by at the end of the cooking process with sauces and garnish to make it restaurant worthy.
