Depends on what kind of kitchen. Shitty diners and cheap restaurants probably don't require much or any experience.
My cousin did the stereotypical thing, started as a dishwasher at a basic burgers and fries type place, then the head cook started training him in the basics, now he works in the kitchen full time.

it depends what you want to do
but generally people work as dish/prep and work there way up. I went to school because I wanted fine dining (and got it) and didn't want to end up with a bunch of bad habits. But most cooking schools are either trash or a joke. I'm definitely including CIA. If you want to go to school work the line first. It's all worth it if you find the right spot.
try to get a job in a hotel or somewhere else that does a lot of volume with out sacrificing too much quality. Find some French guys. That's where the farm to table thing started and it's all more technically proficient than the Italians. A lot of prep is repetition and most of working the line is timing. Overall it's a whole different beast than cooking for you and your homies, but it's better than almost any drug when it's working.

I was a dishwasher for 2 years at a very nice restaurant. I moved up to cold line and was being trained for hot line as well. I did a very good job but the women and people there were disgustingly terrible to me so I quit. And yes I was alcoholic AMA
