I'm making beef wellington for my husband and I with mashed potatoes.

Got some usda prime tenderloin. Made duxelles with crimini, shiitake, portobello and oyster mushrooms with shallots thyme and bourbon. Also wrapped in prosciutto and fois gras.

It's currently sitting in the fridge to bake in about an hour. I hope it comes out well!

Some asian markets sell onigiri kits with a triangular rice mold and seaweed covers so that when you fold just right, it makes a seaweed and plastic wrap cover with a pull tab opening.

Onigiri tastes better when the whole thing is wrapped in seaweed, particularly flavored seaweed. If you don't want to fill them, you can also use various rice toppings mixed in.

You want to use short grain rice cooked in a rice cooker with a bit of extra water. No minute rice, it won't stick.
