stabilizers lead to a gummy ice cream texture. If the ice cream is cooked, processed well, stored well, and has enough fat, you don't really need stabilizers. Ice cream shouldn't be shipped across the globe anyway.

Also, I do recommend making your ice cream at home. It's almost always better, with a few exceptions, for example, local ice cream makers who probably will churn out (no pun intended) better tasting and textured stuff because they understand the science more. Also making ice cream does not take hours, it takes days.
