DISCLAIMER I'm not actually in the competition but wanted to make something for this round since I sponsored it :)

So... Caribbean "fish and chips" or Accras and tostones!

My dish is saltfish accras which are basically fried fish balls (or sometimes flat patties) and tostones which are twice fried plantains. The sauce is a spicy garlicy tamarind sauce. It is completely homemade meaning I shucked the tamarindo by hand, soaked the fruit, strained the pulp, and made a paste.

I will have verticals for everything but won't be able to make them until later tonight, probably 8 hours from now or so.

It's not so much a supply issue as a time issue. I had the ice cream done in the freezer waiting for my coworker to come in tomorrow with her camera for pics. I am much busier this year so I doubt I'll have the time to do something else.

Pye the dumplings were a hit, I fucked the sauce up but eh, I'll order some of the peppercorns on amazon. Thanks again, even coworkers 11 year old loved them and the entire batch was gone.

Couldn't find the peppercorns at either store so I got some kind of crappy szechuan five spice seasoning that will hopefully mimic the flavor... I'll mess with it. Just don't have time today to go searching for them :(

Shit, I think the closest asian market is like 40 minutes away :( Sometimes I get lucky with the local shops for more specialized ingredients, maybe I can try going up to Whole Foods or similar stores... I need these dumplings in my mouth and I can't wait for an online order!
