And I think the first cobbler did what you told him to (not glue stain of course). It's just goodyear welted footwear could be resoled by removing an old sole and non-welted footwear have various problems resoling it(blake footwear have hard time about resoling a sole) or cannot resole it. (normal footwears, called cemented construction, can only be half resoled by your boots method which is cutting down the old one and glueing a newer sole)

They run a little large and very wide. The wideness can be mitigated with a thick insole and thick socks. I wear a size 10 in sneakers, size 9-9.5 in boots, and a 43/8 in memes with an insole and I pretty much exclusively wear two pairs of socks with them.
