So I studied the ass and it turned out a bit frumpier.
What I don't get is how to apply these 'studies' to your own work? Do I literally just do the process I used again but with my own stuff? What exactly was I supposed to have learned from trying to copy the original?

For me, I would always try to do 100 studies of the thing I was trying to render/draw better before I tried approaching it from imagination and I wasn't satisfied (if it felt like it was worth the time). From looking at both of the images zoomed out I think it would be good to make the passive/matte highlights brighter and smooth out slower to the halftones. Also, the left cheek looks like it approaches the dark halfs a little too fast.

That's the thing, you have to know what you're trying to learn beforehand otherwise you're really just noodling. Noodling is fun but it won't teach you much. It's clear you're able to interpret what you see and not slavishly copy, as your version emphasizes the distinct curvature of iliac crest. So go full interpretation instead of reproduction.
What I like most about this drawing, the proportions, isn't what someone else might like most about it, say, the rendering. So if I were to study this I wouldn't even bother rendering it. I'd save a lot of time and focus strictly on measurements, lines, angles, and construction until I'm satisfied I've come up with a pretty good abstraction for personal use. Then practice drawing it from memory, apply to work, etc. If you feel it came out frumpy maybe that's the way to go for you as well.

If you've understood what the original did to achieve its result, and you use the acquired knowledge in your own work. And by understand, I don't mean 'this color goes here, this color goes there'. No, try to understand why, how, where, for what purpose every brush stroke was made, the thought process behind it. You first need a solid base in whatever you're trying to copy to understand it. That's all studies are supposed to do. If you truly get it, you can do whatever you want with it after. Your study looks really good, but I don't think you got it as your highlights, control of values and transitions are lacking. If you like what you did, go ahead and repeat it in your own work, but I think you should try again.

For reals? It's a mixture of color temperature and local color.

Planes of flesh are either parallel to your plane of vision or receding from it. Similarly, they are either in shadow or in light.

If a plane of flesh is parallel to your plane of vision and in the light, it is warm; if it's in shadow, it's cool. If a plane of flesh is receding from your plane of vision and in the light, it's cool; in shadow it's warm. Add into that local color caused by the blood supply being near the surface of the skin, like on the cheeks or knees, and you're all set to depict flesh.
